Keto Dalgona Coffee
I love the way coffee smells but I'm not a big fan of how it tastes. In order to make it drinkable, I have to put in a ton of sweetening and cream and by that time, it's a dessert...a dessert I didn't want in the first place. Yet when the Dalgona coffee craze first began, I have to say I found it intriguing. I couldn't figure out how whipping hot water, instant coffee and sugar would create that nice foamy consistency. I still can't figure it out, but coffee drinker or no, I had to give it a try. To keep my carbs and calories lower, I went looking for a good keto recipe. Here it is.
Quite a small cast today. The sugar replacement, Swerve, can be found in the baking section of the supermarket. Keep in mind that there are different styles; this one, which the recipe recommends, is confectioners style. There is also a granular version. Unsweetened almond milk subs for regular milk.
Instant coffee is added to hot water in a medium-sized bowl.
The Swerve is added--I am ridiculously fond of this wooden measuring spoon; it's a tablespoon on one end and a teaspoon on the other. I found it at Foodland in Windward City Shopping Center, of all places.
Now the fun part. Whisk the mixture for about 4-5 minutes. This is after the first minute.
After the second minute you can really see that the mixture is thickening. This is also about the time I remembered that people with tendonitis needed to avoid this kind of rapid, repetitive motion.
Minute three and I was seriously wondering what the heck I was trying to prove. I don't even like coffee...
By the end of four minutes I was sweating, my hand hurt but the mixture looked gorgeous!
I made this one with regular milk for Eric. Pretty nice if I do say so myself! I thought everyone knew about Dalgona, then Eric said, "You know the coffee taste is really only in the foam." Sigh. He said it was good but I suspect it wasn't strong enough for him. He's a serious coffee drinker. I really liked mine! It was not too sweet and the coffee flavor was there but it wasn't overwhelming. I wouldn't mind drinking it again but I have got to find an easier way to do the whipping. I am not hauling out the Kitchen Aid just for this! :-)
