Sweets for Mom
My mom is a big fan of rocky road; the ice cream, the candy bar. Basically any combination of chocolate, nuts and marshmallows gets her vote. I like the combination myself! Since I am seeing her later this evening for our weekly grocery delivery, I thought I'd throw these together and deliver them, too.
Today's cast and the ultimate irony; this is a Hershey's recipe and neither the cocoa powder nor the chocolate chips are Hershey products. Oh dear.
I decided to double the recipe so I had enough to distribute. Butter can be melted in the microwave but I hate keeping an eye on it, so into a pot it went. On low heat, of course. Once it was completely melted, it went into a bowl with the sugar, vanilla and beaten eggs. Be careful that the warm butter doesn't cook the eggs!
Dry ingredients went into one bowl.
And the wet ingredients were incorporated. I love how easy brownie recipes tend to be. Don't over-mix!
The batter was poured into a greased pan and put in a 350 oven for 25 minutes.
Walnuts are kind of the traditional rocky road nut but I like pecans, so...
I tossed the pecans with the chocolate chips and marshmallows.
The rocky road topping went onto the brownie and back in the oven it went for an additional five minutes. Just till the marshmallow gets warm and puffy.
By the time we ate this, the heat of the day had melted the marshmallows into marshmallow fluff; which was not an issue at all. The guys gave it a thumb's up but they all had the same comment: this is not something you can eat frequently or much of. It's super-rich.
If you like a chewy brownie whose rocky road topping is in equal proportion with the brownie itself...you will love this. Five turtle rating!
