Peach Cobbler Muffins

I love peaches and nectarines. And, it's funny how many of my blogs begin this way, with a profession of love for food. Well, I wouldn't be doing this if I weren't a fan, right? Anyway, one of the unfortunate things about living so far away from places where peaches and nectarines grow is the fruit we get are picked when they are pretty green so they can withstand the shipping. Quality can be pretty hit or miss and when you get a good batch, it's ridiculously exciting! I haven't seen a good batch at the market yet but this recipe from the Back in the Day Bakery Cookbook allows for fresh or frozen.


Here's today's cast.


Fortunately, this is one of those recipes where a mixer is not needed and the directions are basically combine the wet ingredients, combine the dry ingredients and then put them together, because the minute I started pulling ingredients out, both kids suddenly needed my immediate and absolute attention! It never fails and it doesn't matter how immersed they seem to be doing heir own thing; as soon as I get ready to bake, Layla suddenly must brush her teeth and Aiden needs me to name a bunch of dinosaurs, right now! Gah, buttermilk, the egg and the extracts were added to one bowl. Then I ran over to help Layla with her teeth.


Dry ingredients went into a large mixing bowl and I quickly rattled off a bunch of dinosaurs' names for Aiden. I can't fudge it either; he knows the difference between an iguanadon and a pachycephalosaurus. I'm not kidding.


The frozen peaches are cut into chunks.


Then folded into the mixture.


I really prefer using cupcake liners to just greasing a muffin tin unless the recipe specifically says not to. It makes clean up so easy and you don't have to worry about whether the muffins will come out of the pan nicely.


I divided the batter evenly into the tin and then sprinkled Turbinado sugar over the tops.


The muffins baked for 25 minutes at 350 and came out a nice golden brown.


It had a nice airy texture and it wasn't too sweet at all. The crunch of sugar on the top was really good. Unfortunately, this is one of those things that needs to be eaten soon after being taken from the oven. Over the course of the day, the texture got slightly gummy and the sugar on top melted away. It still tasted okay but just okay. Bummer.
