So, I get March 14th being pie/pi day and May 4th being Star Wars day but all the other days like National Doughnut Day? Who in the world determines these things? Then I read that August 10th is National S'mores Day...I don't care who decided this; graham crackers, toasted marshmallows and chocolate? So shall it be!
Here's today's cast.
Rather than bring out the Cuisinart, I decided to make the graham crackers manually. I crumbled a bunch of graham crackers into a large Ziploc bag.
Then I used the wooden pestle to smash the bigger crumbs into smaller bits. There's something therapeutic about the crunch of the crackers under the wood!
Not perfect, but I think this'll work!
Softened butter was creamed with the brown sugar.
Nice and fluffy!
Then the eggs were added.
Flour, graham crackers crumbs, salt and baking powder were whisked together.
Wet and dry are combined.
A slightly textured dough, due to the slightly chunkier graham cracker bits here and there.
Three-fourths of the dough was spread into a greased and parchment-lined pan. It spreads nicely! The remainder was reserved for the topping.

A cascade of mini marshmallows!
Then the remaining dough was dotted all over the top.
I baked it for about 32 minutes in a 350 degree oven.
The bars needed to cool completely in the pan then I lifted it out using the parchment paper. The edges were nice and crusty.
The first taste was a slight disappointment; the marshmallow had gotten toasted and brown but it seemed to merge in with the rest of the bar. It seemed to be just another chocolate chip pan cookie with a crispy bottom. Then I tasted them after they'd been sitting for a while and the marshmallow was suddenly much more recognizable and defined. I want more marshmallow but this is a definite good start! The boys and Amber tried it and both Amber and Tom found it especially good. Definitely a keeper.
